Dairy-Free Nacho Cheese Dip

A nacho cheese dip so creamy and so cheesy no one will suspect it’s dairy-free. This dip is tasty enough to be enjoyed on it’s own but it can also be leveled up and used in our Nacho Recipe as a nacho cheese sauce.

Ingredients

1

medium carrot, peeled and cut into 1-inch lengths

1

(8-ounce) package Nature’s Fynd Original Dairy-Free Cream Cheese

2

tbsp nutritional yeast

1/2

tsp onion powder

1/4

tsp garlic powder

1/4

tsp table salt

2

tbsp canned diced green chiles

2

tsp lime juice

1-2

tsp minced chipotle in adobo

hot sauce to taste (optional)

Steps

In a medium saucepot, add carrot pieces and cover with enough water to fully submerge. Bring to a simmer and cook until carrots are fork tender, about 10 minutes. Drain and transfer carrot pieces to a blender.

Wipe saucepot clean and return to stovetop. Add cream cheese and heat on low until fully melted, about 2 minutes. Add nutritional yeast, onion powder, garlic powder, and salt. Stir to combine, then transfer to blender with carrots. Blend on high until smooth, about 1 minute, stopping to scrape down sides as necessary.

Return cream cheese mixture to saucepot and bring to a simmer. Add diced green chiles, chipotle in adobo, lime juice, and (optional) hot sauce, and stir to combine. Serve warm or at room temperature. (Nacho cheese dip can be stored in an airtight container for up to 5 days and reheated in a saucepot on low, about 4 minutes, or in the microwave at 50% power, about 3 minutes, stirring occasionally for each).

Tips

Make sure to use an orange carrot as it is primarily being used for color. This recipe is highly customizable for varying spice tolerances- for a lower spice level use less chipotle in adobo and omit the optional hot sauce.
