Tex-Mex Breakfast Patty Hash
Sausage and potatoes are a classic pairing so it was an obvious choice to make a hash with our Breakfast Patties. We kept it simple, added some bold spices, and a plethora of topping options to create a satiating meal for any time of the day.

Ingredients

tablespoons oil, divided
3
cups (12 ounces) diced hash brown potatoes
3/4
teaspoon table salt
1/4
teaspoon black pepper

package Nature’s Fynd Original Meatless Breakfast Patties, cut into 1/2-inch pieces
1
bell pepper, cut into 1/2-inch pieces
1/2
red onion, chopped
1
garlic clove, minced
3/4
tsp chili powder
1/2
tsp ground cumin
1
pinch cayenne pepper
Steps

Heat 2 tablespoons oil in a 10 or 12-inch nonstick skillet over medium-high heat. Add potatoes in even layer and sprinkle ½ teaspoon salt and pepper. Cook, undisturbed, until golden brown on bottom side, about 5 minutes. Gently stir potatoes and continue cooking until golden brown on all sides, about 7 to 10 minutes longer. Transfer to large bowl.

Heat 1 teaspoon oil in now-empty skillet until shimmering. Add pepper, onion, and remaining ¼ teaspoon salt. Cook, stirring occasionally, until softened, about 3 minutes. Add garlic and cook until fragrant, about 30 seconds. Transfer pepper mixture to bowl with potatoes.

Heat remaining 2 teaspoons oil in again-empty skillet until shimmering. Add breakfast patty pieces and cook, stirring occasionally, until golden brown on both sides, about 3 to 4 minutes.

Add potato-mixture back to skillet with breakfast patties and sprinkle cumin, chili powder, and cayenne over mixture. Stir to combine then spread mixture into even layer. Cook, undisturbed, for 2 minutes. Stir to combine then cook for another 2 minutes until potatoes are crisp and mixture is warmed through.

Season to taste with salt and pepper. Serve, garnishing with toppings of choice.
Tips
Diced hash brown potatoes can be found in the frozen section of most grocery stores. For an even more streamlined meal, 3 ½ cups frozen ‘Potatoes O’Brien’ can be used instead of diced hash potatoes, bell pepper, and red onion. This hash is highly customizable with different toppings such as diced avocado, lime wedges, vegan sour cream, hot sauce, cilantro, pickled jalapenos, and chopped red onions.
